And the 'Da' means 'belongs to' - ie if a restaurant was to be named Rajinder da Dhaba, the da in the dhaba a derivation from the local dialect Punjabi, meaning that the dhaba belongs to Rajinder (the review in the quote was about the Rajinder da Dhaba restaurant).

So it all makes sense, even if to my white upbringing the name sounds rather intriguing.
